I would ask first for three comparable options with the same guest count, same date window and same service level. Without that, every supplier answers a different question and the budget becomes impossible to read. Compare only quotes with the same guest count and the same service hours. If one supplier counts five hours and another counts eight, the total is not really comparable. Because the event is in Siena, Tuscany, I would also ask who is reachable on the day, not only who sends the quote.
